1/2 kg of spinach
4 tablespoons of beef or chicken broth (or use bouillon cubes)

2 tablespoons of all-purpose flour
to taste with salt and pepper

Wash the spinach thoroughly
Cook it
Strain through a cheesecloth; combine with the water in which it was cooked and the chicken or beef broth
Melt the butter, then whisk in the flour, salt, and pepper
Mix well
Add the milk gradually and cook for 1 minute
Combine the spinach mixture and heat to a simmer
Serve hot
Yield: 6 servings.
