In a heatproof bowl, whisk together the sugar and cornstarch
Add the water, lemon zest, and lemon juice
Heat in the microwave on high for 5-7 minutes, stirring every 2 minutes, until thickened
Remove some of the hot mixture and whisk in the egg yolks
Return everything to the bowl and whisk until smooth
Heat again in the microwave on medium for 1-2 minutes to cook the eggs
Add the butter and whisk until melted
Let cool slightly and pour into a decorative dish or individual cups
Refrigerate until serving time
If desired, garnish with a maraschino cherry.
