Melt the butter in a skillet and whisk in the flour to create a smooth paste
Add the milk, nutmeg, and a pinch of salt
Bring to a simmer and cook until thickened
Assemble the sandwich
Place the chicken breasts in a toaster oven and toast until lightly browned
Next, spread a layer of the sauce on each breast, followed by slices of turkey breast, mozzarella cheese, and finish with the remaining bread slice
Drizzle more sauce over the top and sprinkle with grated Gruyère cheese
Bake in a preheated oven at 160°C until the cheese is melted and bubbly
Serve warm.
