Melt the butter in a pan over low heat, then whisk together the flour and milk
Continue whisking until the mixture thickens to a creamy consistency
Once it's cooled slightly, open the can of tuna and chop it finely
Mix it with the cream, adding a pinch of black pepper and some chopped onion
There's no need for salt, as the tuna is already salty
Add an egg yolk and mix well
Shape into small croquettes, taking about half a spoonful of mixture and shaping it into a ball
Dip each croquette in beaten eggs, pancake mix, and fry them in hot oil.
