Croquette
1/2 cup finely chopped onion
1 tablespoon olive oil
250g ground meat
2 cups mixed vegetables (such as arugula, spinach, and chive)
1 cup diced tomato
3 tablespoons all-purpose flour
1 egg
1/4 cup milk
1 tablespoon chopped fresh parsley
Salt and black pepper to taste
To coat and fry
Beat 1 egg
3 tablespoons breadcrumbs

Make the croquette:
In a pan, sauté the onion in olive oil until golden brown
Add the ground meat and cook until it's dry, stirring frequently
Then add the mixed vegetables and diced tomato
Season with salt and black pepper to taste
Remove from heat, stir in the all-purpose flour and dissolved egg in milk
Mix well
Heat the mixture over low heat, stirring constantly, until it forms a thick paste
Add the chopped parsley and remove from heat
Let it cool down
Coat and fry:
Dip each croquette into the beaten egg and then roll it in breadcrumbs
Fry in olive oil until golden brown.
