1/2 pound of ground beef or pork
2 tablespoons of oil
salt and black pepper to taste
1 tablespoon of chopped fresh parsley
1 tablespoon of finely chopped onion
1/2 teaspoon of Worcestershire sauce
1/4 teaspoon of grated nutmeg
1/2 tablespoon of butter or margarine
2 eggs
1 tablespoon of all-purpose flour
beaten eggs

Brown the beef in oil
Season with salt and pepper and cook for 30 minutes, adding hot water as needed
Let the beef cool and grind it in a meat grinder
In a pan, combine the ground beef, the juices that formed, the parsley, onion, Worcestershire sauce, nutmeg, and butter or margarine
Add the eggs and mix well
Add the all-purpose flour and cook over medium heat, stirring until you get a creamy mixture that's not too firm
Let it cool and shape into croquettes
Coat them in bread crumbs, beaten eggs, and again in bread crumbs
Fry them in hot oil
Serve 4 servings.
