250g of blanched hazelnuts
1 tablespoon sugar
1/2 cup milk
2 egg yolks
18 pieces of hazelnuts, halved lengthwise

Mix all ingredients well, except for the hazelnut pieces
Add them later
Cook over low heat, stirring constantly, until the mixture thickens and comes away from the sides of the pan
Let cool, then shape into small patties
Each patty should be about 1/2 inch thick
Place a piece of hazelnut on top of each patty
You'll need about 36 hazelnuts total
Fry until golden brown and crispy.
