1/4 cup finely chopped onion
3 spoons of butter or margarine
4 spoons of all-purpose flour
1 spoon of salt
1/4 spoon of black pepper
1/4 spoon of mustard powder
1 cup of milk
6 hard-boiled eggs, peeled and diced
1 egg beaten
2 spoons of cold water
breadcrumbs

breadcrumbs
Soften the onion in butter until it's soft
Add the next 4 ingredients
Mix well
Add milk, mix well, and place over low heat in a bain-marie
Cook, stirring constantly, until the mixture is thick
Add the diced eggs
Let it cool completely
Shape the croquettes by dipping them first in the beaten egg mixed with cold water and then in breadcrumbs
Fry in hot oil or butter until golden brown.
