Mix all the ingredients well, forming a dense cuscus
Place on top of a steamer, lined with a cheesecloth
Press down firmly
Cover the cuscus with the ends of the cheesecloth
Steamer-tight
In the absence of a steamer, place the mass in a deep plate, press down well and wrap the plate with a cloth, securing it on the bottom of the plate and not on the cuscus
Place the plate upside down with the cuscus facing down, over a double boiler
Cook for 45 minutes over low heat
Remove from heat and unmold while still hot
Serve accompanied with coconut milk
Serves 6-8 people.
