1 Preheat the oven to 250°C
Season the fish with lime and salt
Place half of the spinach in a baking dish and arrange the fish on top of it
2 Spread the remaining spinach and ginger over the top and brush with coconut milk
Cover with aluminum foil and bake for 10 to 15 minutes or until the fish is cooked through
Serve immediately
