2 tablespoons of olive oil or neutral oil
4 cups of roasted tomato vinaigrette (see note)

Roast the tomatoes
Make a sofrito with the aromatics and oil
Cook until everything is soft
Add the tomato vinaigrette
Season with salt to taste
Mix well, let it cool, and serve
This is perfect for accompanying grilled or rolled steak (or so say people from inland regions)
It's also great for serving with toucinho rice (which is just rice cooked with small pieces of pork), which is absolutely delicious!
