Place the sugar in a small saucepan and heat it over low flame until caramelized
Gradually add 1 1/2 cups of water, allowing it to flow off the edges of the saucepan
Stir until the sugar is dissolved
Add the pineapple slices and cook for 20 minutes or until they're tender
Transfer to a dish and sprinkle grated coconut over the top
Chill before serving
