5 fresh carrots

200g of dried raisins

Boil the whole carrots and garlic in salted water
Cut the carrots into small cubes, remove the core, and cut into small pieces
Mash the garlic with a pinch of salt
Place the ingredients in a pot, including the ginger, cinnamon, ground cumin or turmeric, dried raisins, and soy oil
Simmer for 5 minutes, then add 1 cup of water and cook without covering, stirring occasionally, until the liquid evaporates
Cook until the carrots are tender, then add the honey, cinnamon, and nutmeg
Remove from heat when caramelized, let cool before serving
Serve 4 to 6 servings.
