In a large saucepan, combine the orange juice and sugar to simmer
Add the cloves and cinnamon
Stir with a wooden spoon until the mixture thickens slightly and reaches a jelly-like consistency
Sieve the egg yolks through a fine-mesh sieve and slowly pour them into the mixture
Do not stir
Allow it to boil for five more minutes
Poke the mixture gently with a wooden spoon, forming a cross pattern
Remove from heat
Store in a compote dish and serve chilled.
