4 pineapples
1/2 kg of grated coconut
1 kg of sugar

700 g of fondant (available at supermarkets and party stores)
150 g of desiccated coconut
200 g of melted milk chocolate

200 g of melted milk chocolate
Pit the pineapples, grate the pulp, and strain the juice
In a saucepan, mix the grated pineapple with sugar and cook over low heat until the mixture thickens slightly
Add the grated coconut and continue cooking while stirring constantly until it starts to separate from the bottom of the pan
Let it cool down
Shape into small balls and reserve
Melt the fondant in a double boiler
Dip each ball into the melted fondant
Let it cool down again
Dunk the base of the fudge into the melted milk chocolate and then into the desiccated coconut
Serve in small molds.
