2 medium zucchinis

Cut the zucchinis into fine strips lengthwise
Blanch them in boiling water with salt and drain well
Place them on paper towels to dry
Slice the mozzarella and chicken breast into strips
In each zucchini strip, place one slice of mozzarella and two slices of chicken breast
Roll it up, secure with a toothpick, and chill for 10 minutes
In a bowl, mix together mustard, honey, olive oil, lime juice, and salt
Remove the toothpicks from the rolls and arrange them in a serving dish with lettuce leaves
Season with the sauce and serve immediately.
