6 chicken breasts
2 crushed garlic cloves
1 1/2 teaspoons of salt
1 pinch of black pepper
2 tablespoons of dry white wine
6 slices of smoked turkey breast
1 cup of cooked spinach
Olive oil for brushing
1/2 cup of low-fat chicken broth
Wrap each chicken breast between two pieces of plastic wrap and pound with a meat mallet to make it thinner
Season with garlic, salt, pepper, and wine
Place the breasts on a flat surface and top each one with a slice of smoked turkey breast and some cooked spinach
Roll up, forming a cylindrical shape, and secure with toothpicks
Heat an oiled skillet over medium heat and cook the rolls for about 4-5 minutes on each side or until they're golden brown
Add the chicken broth, cover the skillet, and simmer for another 10 minutes or until the rolls are cooked through
Serve immediately.
