4 open and cleaned sardines
Juice of 4 limes
1 medium carrot cut into sticks

In a baking dish, distribute the sardines and cover them completely with lime juice
Cover with plastic wrap and refrigerate for at least three hours
In a pot, add water, bring to a boil, then put in the carrot, celery, onion and let it simmer for two minutes
Drain and pass the vegetables still warm through cold water to stop cooking
Drain the water and season with olive oil, salt, and ginger
Remove the sardines from lime juice
Stuff them with vegetable sticks, roll them up, and secure with a toothpick.
