In a large pot, fry the pork rind and garlic in olive oil for 3 minutes
Add the lentils and bacon
Simmer for 5 minutes
Add the rosemary and water
Cook for 20 minutes, or until the lentil is tender and the stew has thickened
If necessary, add more water
Season with salt, transfer to a bowl, and serve hot.
