4 sweet herbs cut into strips
1/2 cup of olive oil or vegetable oil
2 cloves of garlic minced
1 onion thinly sliced
3 medium tomatoes, seeded and chopped not too fine
salt and black pepper to taste
Breadcrumbs:
1/2 cup of fresh parsley breadcrumbs
1/2 cup of grated Parmesan cheese
1 tablespoon of lemon zest
1 clove of garlic finely minced

Heat the oil in a large skillet
Sauté the garlic and onion for 1 minute
Add the sweet herbs and continue to sauté, stirring with a wooden spoon
When it starts to brown and is almost cooked, add the tomato and seasonings
Lower the heat and cook for 5 minutes
Place the mixture in a baking dish
Mix the breadcrumb ingredients and sprinkle on top
Bake in a preheated oven at 220°C for about 15 minutes
Serves 4 people.
