Heat the olive oil in a pan and add the chopped onion
Sauté until they are tender, but not browned
Add the green beans and reduce heat
Cover the pan and cook until the green beans are tender
Stir occasionally to prevent burning and add hot water as needed
Combine with shredded coconut and season with salt and black pepper
Mix delicately and serve immediately.
