2 cups of black plums

Soak the black plums in cold water and cook for about 7 minutes or until they become soft
Drain, remove the pits, chop well, and process through a food mill or blender
Reserve 1 cup of plum puree
Add half of the sugar and lemon juice, and cook for a few minutes or until it thickens
Let it cool
Beat the egg whites until frothy
Add the remaining sugar to the egg mixture, beating until firm
Mix with plum puree and spoon into individual servings
Refrigerate
To serve, distribute natural yogurt among the servings
Garnish with 6 sprigs.
