Heat a saucepan over low heat with the rice, milk, lemon zest, and let it cook until the liquid is absorbed
Remove from heat, let it cool; mix in the egg whites, pudding mix (reserve 2 packets) and place in a bowl
Next, mix in the strawberries, wine, reserved pudding mix, and pour over the rice
Chill in the refrigerator to serve cold.
