2 cups of whipped cream

Peel the pears and cut them into sticks, removing the seeds first
Cook them with water and sugar until they're soft
Mash them and strain through a sieve
Add the liqueur and whipped cream
Distribute this cream in ice cube trays without dividing lines, and refrigerate for two hours
Stir every half hour with a wooden spoon
When ready, place the foam in glasses and serve immediately.
