Beat the egg whites until stiff peaks form
Add the sugar and beat until well combined
Add the eggs, salt, and flour, one at a time, and mix well
Pour into a greased and floured pan, also lined with parchment paper, and bake in a medium oven until golden brown
Filling
Mix the ingredients together in a saucepan and cook over low heat, stirring constantly, until shiny
Sauce
Mix the orange juice with sugar and cook over low heat until thickened
Assembling
With the pastry still warm, fill the cake with the egg yolk mixture and roll it up like a roulade
Let cool and then dip in the sauce.
