1 large sweet potato
1 cup of green pepper, seeded and chopped
4 leaves of American kale, torn
1 Japanese cucumber, cut into cubes
3 medium tomatoes, peeled and seeded, chopped
1/2 cup of red onion, chopped
1/2 cup of chives, chopped
1/4 cup of parsley, chopped
Salt, oil, and lime juice to taste
1 large sweet potato

Roast the sweet potato until it's tender and break it into pieces
Set aside
In a bowl, combine the pepper, kale, cucumber, tomatoes, onion, chives, and parsley
Season with salt, oil, and lime juice when serving
Mix in the sweet potato pieces and serve immediately
If desired, sprinkle with grated ricotta.
