Let the beans soak for one day and then another
Cut the smoked pork rind into cubes of 2 cm
Melt the butter or margarine in a 3-liter pot and fry the pork rind on all sides until golden brown
Drain the beans and add them to the pot with the pork rind
Add the pears, salt, and black pepper and mix well
Add the water, cover, and cook over low heat for 1 to 1.5 hours or until the beans are tender
When serving, mix well so that the pears break apart
Taste and adjust seasoning as needed, sprinkle with chopped cilantro, and serve
Serve 4-6 people.
