Step 1: In a saucepan, combine the milk and vanilla extract
Bring to a boil over high heat
In a medium bowl, whisk together the eggs, sugar, and cornstarch until smooth
Step 2: Gradually add the hot milk to the egg mixture, whisking constantly
Place the bowl over simmering water and cook, stirring constantly, for 10 minutes or until thickened
Remove from heat and let cool
Praline
Step 1: Grease a smooth surface with butter
In a saucepan, combine the sugar and bring to a boil over medium heat, stirring constantly
Remove from heat and stir in pecans
Spread on the prepared surface and smooth with an offset spatula
Step 2: As it starts to set, cut into squares
Let cool completely
Step 3: Distribute the cream among individual serving dishes
Top each dish with a quartered fig
Garnish with praline and serve immediately.
