1 piece of beef mignon fillet weighing 600g
Oil (for brushing)
1 large onion, finely chopped
1/4 cup butter
1 tablespoon all-purpose flour
1/4 cup dry red wine
500g fresh mushrooms (champignon)

Cut the beef into 10cm wide slices
Cut each slice in half lengthwise (photo)
Season with salt and pepper, then brush with oil
Sauté the onion in butter over low heat until golden
Add the flour and cook for 1 minute over high heat
Add the red wine and stir well
Add the mushrooms, season, and simmer until the sauce thickens
Heat a non-stick skillet over medium-high heat
Cook 2-3 fillets at a time to your desired level of doneness, then serve with mushroom sauce
