In a large skillet, heat the oil, add the beef and cook for about 1 minute on each side, until lightly browned
Reduce the heat slightly and flip the beef
Cook for an additional 2-3 minutes, or until cooked to your liking
Remove from the skillet and place in a warmed serving dish
Add the butter to the skillet and stir, scraping up any browned bits at the bottom
Add the green onions and cook, stirring, for about 1 minute
Add the mustard, pickles, and chives
Also add any liquid that has accumulated in the serving dish
Serve the beef covered with the sauce, hot
Serve 6 portions.
