4 chicken breasts, cut into 8 strips
salt and black pepper to taste
4 tablespoons of butter or margarine
To make the sauce:
150g of fresh Minas cheese, finely chopped
1 small cup of natural yogurt (200g)
1/3 cup of green olives, pitted
3 tablespoons of finely chopped scallions
2 tablespoons of freshly chopped parsley
2 tablespoons of dried thyme
salt and black pepper to taste

Season the chicken strips with salt and pepper
Fry quickly on both sides in melted butter
Place in a refractory dish
To make the sauce, mix the Minas cheese with yogurt until smooth
Add the remaining ingredients and mix well
Arrange over the chicken strips
Bake in a moderate oven (180°C) covered with aluminum foil for about 15 minutes or until the cheese melts
