For the fish stock
Lingcod spine
1 cup white wine
2 cups water
1 piece of salt
1 piece of onion
1 piece of garlic
For the lingcod
1 tablespoon finely chopped nira or scallion
200g lingcod fillet
1 medium-sized potato
1 medium-sized spinach leaf
4 medium-sized broccoli florets
1/2 zucchini
1/2 carrot
Nira is a type of Japanese leek, similar to scallion. If you can't find it, use regular scallion.
For the fish stock

For the fish stock
Bring water, white wine, lingcod spine, salt, onion, and garlic to a boil
Simmer for 40 minutes
Strain and use
For the lingcod
Cook lingcod fillets in steam for about 6 minutes after the water starts boiling
Cook vegetables in steam as well for the same time
Prepare the sauce by blending nira with fish stock in a blender for 7-8 seconds or until nira is fully incorporated
Add cooked potato and blend until smooth
Arrange lingcod fillets on a plate, add vegetables, drizzle with sauce, and serve.
