1/2 cup olive oil (120 ml)
1/2 cup soy sauce (shoyu - 120 ml)
1/4 cup balsamic vinegar or red wine vinegar (60 ml)
8 crushed garlic cloves
4 sprigs of dried thyme, crushed
1 whole black peppercorn
1.7 kg filet mignon, trimmed to 1.2 kg
For the Peppercorn Sauce
1/3 cup olive oil (80 ml)
2 large onions (300 g), cut into 2.5 cm squares
2 red bell peppers (260 g), cut into 2.5 cm squares
1 tsp dried oregano, crushed
1 whole black peppercorn
1 tsp salt
1 whole black peppercorn
1/2 cup olive oil (120 ml)

For the Peppercorn Sauce

In a large bowl, combine all the ingredients except the filet mignon and mix well
Place the filet in the bowl on top of the marinade, and with a spoon, coat it evenly from all sides
Cover with aluminum foil and refrigerate for at least 1 day
Remove from the refrigerator and let it sit at room temperature for about 1 hour
Prepare the Peppercorn Sauce: in a large skillet, heat the olive oil over medium heat
Add the onion and bell pepper squares and cook, stirring occasionally with a wooden spoon, until they're tender (about 8 minutes)
Add the remaining ingredients and cook, stirring occasionally, for about 2 minutes. Reserve
Heat a grill or broiler to high
Drain the filet mignon (reserve the marinade) and grill, turning occasionally, until it's cooked to your liking (about 30 minutes). Reserve
Heat the reserved Peppercorn Sauce for about 3 minutes. Reserve
In a medium saucepan over high heat, simmer the reserved marinade (about 3 minutes)
Remove from heat and strain through a fine-mesh sieve
Cut the filet into thin slices and arrange on a platter
Around it, distribute the Peppercorn Sauce
Serve immediately with the sauce on the side
