2 packets of bread yeast
1 warm cup of water
3 1/4 to 3 1/2 cups of wheat flour
1 1/2 teaspoons of salt
6 tablespoons of olive oil
For the filling:
2 medium tomatoes, peeled and seeded, diced
2 tablespoons of chopped basil
3/4 cup of shredded Minas cheese
1/2 cup of ricotta cheese
1 finger pepper, chopped
1 tablespoon of chopped thyme
3 tablespoons of olive oil
salt and black pepper to taste

Combine the yeast in a small bowl with the warm water and stir until dissolved
Let it rest for 5 minutes
In a large bowl combine 3 1/4 cups of wheat flour, salt, and 3 tablespoons of olive oil
Add the yeast mixture, mix well, and place on a floured surface
Knead until a soft ball forms
If desired, process the dry ingredients in a food processor with the metal blade, then add the dissolved yeast and oil; process for 45 seconds or until a ball forms
Grease a large bowl with oil
Place the dough, cover, and let rise in a protected area for 1 hour
Grease a baking sheet measuring 22 x 30 cm with 1 tablespoon of oil
Gently deflate the dough by hand to remove air
Do not overwork
Open the dough enough to cover the bottom of the baking sheet (if the dough is too elastic and shrinks, cover it again and let rest for 15 minutes before opening)
Cover the baking sheet with a cloth and let the dough rise for 30 minutes
Prepare the filling: mix all ingredients well
Place the oven rack in the lowest position
Heat the oven to medium heat (200°C)
Use your finger to make small indentations in the dough, spaced about 5 cm apart
Brush with the remaining 2 tablespoons of olive oil
Sprinkle with thyme
Bake for about 25 minutes or until lightly browned on top
Let it cool on the baking sheet
Cut into 5-cm squares
Cut each square in half horizontally and fill
Serve warm.
