Pound the olives finely
Mix with ricotta, mayonnaise, and mustard to form a paste
Shape into a log-like form
Spread a small amount of this paste onto a slice of prosciutto
Cover with another slice
Repeat the process until all ingredients are used up
Wrap in aluminum foil
Make 3 more pinwheels using remaining prosciutto and paste, then wrap in plastic wrap and refrigerate
Cut these pinwheels into squares just before serving
Serve with toothpicks.
