2 tablespoons of oil or olive oil (or more if needed, for frying)
4 medium-sized potatoes (around 500g) peeled and cut into cubes

2 cloves of garlic
2 tablespoons of olive oil
3 medium-sized tomatoes cut into cubes
1 large finger pepper finely chopped
100g of canned tomato puree
1 sprig of fresh thyme
1 sprig of fresh rosemary
Salt and black pepper

Fry the onion and garlic in olive oil
Add the diced tomatoes and finger pepper
Let it cook for a few minutes
Join the other ingredients and maintain medium heat until the mixture reduces to half
Check the salt and pepper and adjust if needed
Remove the herb sprigs
Yields approximately two servings.
