1 kg of chicken pieces
2 slices of ginger
1 small green onion (white and green parts)
1 piece of cinnamon
2 teaspoons of white pepper
3 tablespoons of olive oil
1 1/4 cup of water
1/4 cup of soy sauce
1/4 cup of dry white wine
1 tablespoon of black mustard

If desired, remove the skin from the chicken pieces
Cut the ginger into small pieces
Cut the green onion into slices
Wrap the cinnamon and pepper in a small piece of cloth, tie the ends and create a bundle
Heat the olive oil in a pressure cooker and lightly brown the chicken
Drain the excess fat
Add the water and sprinkle with the ginger and green onion
Place the cloth bundle in the center
Mix the soy sauce, wine, and mustard
Add to the pot and close it
When steam starts to come out, calculate 15 minutes
Let it cool naturally for 5 minutes and then place under cold running water
Thicken the sauce if desired
This recipe made in a common pot takes 40 minutes
