Place the chicken breast pieces, skin side down, in a single layer on a well-greased baking dish; top with onion slices
Mix the remaining ingredients in a small saucepan; bring to a simmer; pour over the chicken
Bake in a hot oven for 30 minutes
Flip the chicken, brush with the pan juices and continue baking for another 30 minutes or until the chicken is tender and nicely browned
Serve 4-6 portions
