1 medium chicken, cut into pieces
1/4 cup all-purpose flour
salt and black pepper to taste
1 can of pure tomato sauce
1 medium onion, chopped finely, not too fine
1/4 cup chopped fresh parsley, not too fine
1 tablespoon olive oil
1/8 teaspoon thyme (optional)

Wash the chicken and dry it well
Mix the flour, salt, and black pepper
Pass the chicken pieces through this mixture
Arrange the chicken pieces in a baking dish
Blend the tomato sauce, onion, parsley, olive oil, and thyme in a blender for 10 seconds
Pour this mixture over the chicken
Bake in a hot oven (200°) for 45 minutes, basting with the sauce as needed
Check the seasoning and add salt if necessary, to taste.
