4 tablespoons of pork cracklings
2 tablespoons of annatto in grains or colorant
1 tablespoon of finely chopped green onion
2 cloves of mashed garlic
1 medium onion, thinly sliced
1 pound 12 ounces chicken, boneless and skinless, cut into pieces

Let the chicken marinate in water with lime juice for 30 minutes and drain

Season with garlic and salt

In a large pan, heat the pork cracklings over high heat and fry the chicken until golden brown

Add the marinade to the pan, stirring occasionally, scraping up any browned bits from the bottom of the pan

Reduce heat and add two more cups of water
Cook for 40 minutes

Add annatto, stir well, and cook for an additional 5 minutes or until tender

Serve in a bowl with chopped onion, green onion, and lime.
