In a bowl, whisk the eggs well and season with salt and pepper

In a large anti-adhesive skillet, heat the olive oil, sauté the onion, vegetables, and cooked pasta

Add the whisked eggs, sprinkle with shredded mozzarella, and garnish with chopped parsley to taste

Cook over low heat with the skillet covered until the fritada is golden brown on both sides
