Wash the zucchinis thoroughly, but do not peel them
Cut them into 1/2 cm thick slices and season with salt as needed
Fry in olive oil and butter or margarine until tender
Beat the eggs with a pinch of salt and black pepper, and pour over the zucchinis
Cook on one side until the eggs are creamy, then flip
Sprinkle with Parmesan cheese and place under the broiler (220°C) for 10 minutes, or until the cheese melts
Cut into sticks and serve
Yield: 6 to 8 servings.
