Fritures:
1 medium broccoli flower
2 2/3 cups all-purpose flour
2 cups milk
4 eggs
3 tablespoons capers
4 teaspoons active dry yeast
Oil
Sauce:
1 cup grated cheddar cheese
1 cup grated provolone cheese
1 cup milk
1 tablespoon mustard
Salt and pepper to taste
8 carrots
Fritures:

To make the fritters: combine broccoli flower (chopped), flour, milk, egg yolks, capers, and yeast in a large bowl
Beat the egg whites until stiff and add to mixture
Fry the batches (1 tablespoon) for 5 minutes
Drain on paper towels and keep warm in a low oven
To make the sauce: combine all ingredients in a pan and heat, stirring, until the cheese melts
Serve the sauce over the fritters, with cooked and halved carrots, and serve 8 fritters.
