For the dough
1/2 cup milk - 120 ml
1 cup water - 240 ml
1/2 teaspoon salt
1/2 teaspoon butter or margarine - 7.5 g
1 1/2 cups all-purpose flour - 225 g
For the filling
1 tablespoon olive oil - 15 ml
1 minced clove of garlic - 4 g
1 medium tomato, peeled and chopped - 120 g
300 g cleaned shrimp
2 tablespoons chopped fresh parsley - 10 g
1 1/2 teaspoons all-purpose flour - 15 g
1/2 cup cold milk - 120 ml
Salt and black pepper to taste
2 lightly beaten eggs, for wrapping the rissoles
1 cup breadcrumbs - 180 g
Olive oil (for frying)

Heat a saucepan with the milk, water, salt, and butter or margarine
When it starts to simmer, reduce the heat
Gradually add the all-purpose flour
Mix until cooked and free of lumps, forming a ball
Remove from heat and let cool
In a frying pan with olive oil, sauté the garlic and tomato
Add the shrimp and parsley
Cook over low heat, covered, stirring occasionally
Simmer and reserve the liquid formed
Pulse the shrimp in a food processor or blender
Mix with the simmered liquid
Mix well
Dissolve 1 1/2 teaspoons of all-purpose flour in milk
Join to the shrimp mixture
Season with salt and black pepper to taste
Heat over low heat to thicken
Let cool
Roll out the dough with a rolling pin
Cut into sheets, about 7 cm in diameter, or use a glass
Place 1/2 teaspoon of filling on each sheet
Fold the dough and press the edges
Dip the rissoles in lightly beaten eggs and then breadcrumbs
Fry in hot olive oil
Make about 30 rissoles
Note: To vary the filling, use palmito, cheese, or ground meat.
