Combine the flour, egg yolks, 1/2 teaspoon of baking powder, rum, buttermilk, and a pinch of salt in a bowl
Mix well
Shape the dough into a ball and place it on a floured surface
Work the dough until it becomes firm and smooth, but not too hard
Place the dough inside a plastic bag and let it rest for about two hours to lose all elasticity
Roll out the dough thinly and cut it into rectangles of 12.5 cm x 7.5 cm
Make a slit in the center and insert two ends of the rectangle
Heat oil in a large frying pan over medium heat until very hot
Fry 2-3 fritters at a time for 1-2 minutes, flipping them when they brown on one side
Remove the fritters from the oil with a long fork and drain on paper towels
Arrange the fritters in a pyramid shape on a platter and sprinkle with baking powder
Serve with ice cream.
