1 1/2 tablespoon of unflavored gelatin
1/2 cup cold water
2 cups beef broth
1 cup chicken broth
1 small onion, finely chopped
1/4 cup fresh parsley, chopped
salt and pepper to taste
1 hard-boiled egg, cut into slices

Soak the gelatin in cold water for 5 minutes
Combine the remaining ingredients except for the hard-boiled egg
Bring to a boil and let cook for 10 minutes
Add the gelatin and stir until dissolved
Let it rest for 5 minutes
Chill
Serve, breaking the gelatin with a fork just before serving
Place an egg slice in each bowl, garnish with lemon slices, and serve cold.
