1 tablespoon of unflavored gelatin
1/4 cup of cold water
1 cup of hot water
2 tablespoons of chopped parsley
To taste: salt
2 tablespoons of lemon juice
1/4 cup of vinegar
1 cup of grated carrot
1 cup of finely chopped cabbage
1/2 cup of peas
Fresh lettuce leaves
Mayonnaise or creamy dressing for salad

Dissolve the gelatin in cold water
Add hot water and stir until the gelatin is dissolved
Add parsley, salt, lemon juice, vinegar, and stir well
Refrigerate to allow it to firm up
In separate containers, mix carrot with cabbage and peas, then add this mixture to the gelatin mixture, stirring carefully
Pour into individual molds that have been passed in cold water and refrigerate until firm
Unmold over fresh lettuce leaves and serve with mayonnaise or creamy dressing for salad
Yield: 6-8 portions.
