4 teaspoons of ginger in powder
12 tablespoons of ground coriander
6 tablespoons of ground cumin
3 tablespoons of star anise
1/2 cup small pieces of cinnamon bark
4 teaspoons of ground cardamom
5 bay leaves
3 1/2 teaspoons of black pepper
3 tablespoons of cloves
4 teaspoons of ginger in powder

Open the cardamoms and remove the seeds
Remove the husks
Break the cinnamon into small pieces
Mix all the spices, except for nutmeg
Grind the mixture in a mortar until it becomes fine
Add the nutmeg and mix again
Store it in a clean, dry, tightly sealed glass jar.
