4 tablespoons sweet mirin syrup (sweet)
4 tablespoons shoyu soy sauce
5 tablespoons sugar
2 slices of ginger
1 tablespoon cornstarch dissolved in 4 tablespoons water

Scale the cod fillets on an inclined surface with the help of a shell (1)
In a large pot, combine the water, soy sauce, sweet mirin syrup, shoyu soy sauce, sugar, and one slice of ginger thinly sliced
Heat it over medium heat
Place the fish on top of the broth (2) and let it cook for 15 minutes with the lid covered by aluminum foil (3)
Add the cornstarch to thicken the sauce (4) and let it cook for another 8 minutes
Place each cod fillet in a large plate with great care to preserve its entire shape (5)
Dress with the cooked sauce and garnish with thinly sliced ginger.
