Place the gelatin in a medium bowl
Pour the boiling water over it and stir to dissolve
Add the sugar and stir until dissolved
Let it cool slightly
In a large bowl, beat the egg whites until they thicken
Gradually add the yogurt and beat well
Add the gelatin and mint cream
Pour into a 26x16 cm freezer-safe mold and freeze for at least an hour or until partially frozen
Beat in a large bowl until creamy but not fully thawed
Don't overbeat (there should still be some ice crystals)
Cover with lid or aluminum foil and freeze until firm but not hard (about 2 hours)
Serve 8 portions.
